Here is a great recipe for grilled lamb chops, an Easter favorite. This adds a little twist with a nice and easy mint sauce on the side for dipping.
- 8 Lamb chops 1 1/4″ thick
- 3 tbls. olive oil
- 2 tbls chopped fresh rosemary
- 3 cloves garlic minced
- 1 tsp kosher salt
- fresh ground black pepper to taste
Mint Dipping Sauce
- 1/2 cup mint leaves
- 1/2 cup plain yogurt
- 1 clove garlic minced
- 1 tsp lemon juice
- 1 tbsp olive oil
Chops are best at Medium Rare 7-8 minutes tops or 135.*
Take Rosemary , olive oil, garlic and brush over chops before placing on grill.
If you have a smoker box, peach wood chips and sprigs of rosemary add a nice flavor.
Put sauce ingredients in bowl and whisk . Garnish with whole mint leaves.
