Here is a great recipe for grilled lamb chops, an Easter favorite. This adds a little twist with a nice and easy mint sauce on the side for dipping.
Grilled Lamb Chops w/ Mint Dipping Sauce
- 8 lamb chops 1 1/4 inches thick
- 3 tablespoons olive oil
- 2 tablespooons chopped fresh rosemary dried rosemary is not a good substitute here
- 3 cloves garlic minced
- 1 teaspoon kosher salt
- freshly ground black pepper to taste
Mint Dipping Sauce
- 1/2 Cup Mint Leaves
- 1/2 Cup Plain yogurt
- 1 clove garlic minced
- 1 tsp lemon juice
- 1 tbsp olive oil
- Chops are best at Medium Rare 7-8 minutes tops or 135.*Take Rosemary , olive oil, garlic and brush over chops before placing on grill. If you have a smoker box, peach wood chips and sprigs of rosemary add a nice flavor.Put sauce ingredients in bowl and whisk . Garnish with whole mint leaves.
