This is just somethin’ I threw together last weekend, y’all. I was craving something with a Mexican flavor and this casserole hit the spot.

Directions

  • 1 lb. Ground Chorizo (I found in meat department at Kroger)
  • 1 large bag Mexican shredde Cheese
  • (2) 5.5 oz. bags of Knorr Spanish Rice
  • Ketchup
  • 6 Farm Fresh Eggs.
  • Tequila
  • Zing Zang

Cook Chorizo and while doing so cook Rice according to directions.

Use some of the Chorizo grease and grease 13×9 casserole dish.

Take a rocks glass, pour a healthy shot of tequila and add Zing Zang. Enjoy your Mexican Mary. (optional)

Pour Rice into casserole dish, add cheese and chorizo. Take ketchup bottle and squeeze generously over mixture(optional). Mix all together.

Crack eggs over top spreading evenly and break yolks

Bake at 350 for 20 minutes or until eggs are set

Serve.

Holds well and is easily reheated in microwave.
