Spring and March Madness are in the air. Since most of us begin to consider shedding that winter weight, I have used this recipe replacing cream cheese and shredded cheese with avocados.

  • 6-10 jalapenos- cut in half and de-seeded..wash hands immediately after or wear gloves
  • 2 large ripe avocados
  • 3-5 pieces of bacon cut in half
  • BBQ rub – optional
  • Ranch dressing for dipping
  • 2 tbsp olive oil
  • Chopped fresh cilantro for garnishing
  • 1/4 cup cheese optional

pre heat oven to 375*

Put avocado and olive oil in a bowl and mash until soft .. ( you can add 1/4 cup cheese if you like, any shredded will do.. DO NOT add oil if you are using cheese)- add your fave BBQ rub to taste if you prefer

Spoon mix into each jalapeno half

Wrap bacon around jalapeno. Make sure the ends are at the bottom if possible

Place on oil sprayed cooking sheet

Cook 25-30 minutes. until bacon is cooked and jalapenos are wilted.

Garnish with chopped fresh cilantro

Serve with a side of ranch

NOTES:

If you de-seed correctly, the jalapenos will mellow out to a nice heat that compliments the nuttiness of the avocado and smokiness of the bacon
