Here is a great recipe for grilled lamb chops, an Easter favorite. This adds a little twist with a nice and easy mint sauce on the side for dipping.

Ingredients

  • 8 Lamb chops 1 1/4″ thick
  • 3 tbls. olive oil
  • 2 tbls chopped fresh rosemary
  • 3 cloves garlic minced
  • 1 tsp kosher salt
  • fresh ground black pepper to taste

Mint Dipping Sauce

  • 1/2 cup mint leaves
  • 1/2 cup plain yogurt
  • 1 clove garlic minced
  • 1 tsp lemon juice
  • 1 tbsp olive oil

Chops are best at Medium Rare 7-8 minutes tops or 135.*

Take Rosemary , olive oil, garlic and brush over chops before placing on hot grill.

If you have a smoker box, peach wood chips and sprigs of rosemary add a nice flavor. If you are using this method, get that smoke rolling and then place chops to cooler side of your grill and use cover so as to get smoky flavor. The chops don’t take long to cook, so getting a good rolling smoke is important.

Put sauce ingredients in bowl and whisk . Garnish with whole mint leaves.
